Between school, sports, festivals, and other fun fall activities, it’s easy to get overwhelmed during this busy season. When you finally reach the end of the day, dinner may seem nearly impossible. For busy fall nights, casseroles might just be your best option! We’ve compiled a list of our favorite tasty and heartwarming fall casseroles to help you get in the spirit of the season and find some extra down time!

Cheesy Gnocchi Casserole with Ham and Peas

This casserole is cheesy, delicious, and simple to make! Best of all, this casserole should only take about 30 minutes total between prep time and cook time. 

Ingredients:

  • 1 chopped onion
  • 1 8 ounce deli ham, diced
  • ½ tsp chopped fresh thyme
  • ½ cup low-sodium broth
  • 1 17.5 ounce package gnocchi
  • 1 cup frozen peas, thawed
  • 1 tbsp unsalted butter
  • ¼ cup heavy cream
  • Kosher salt and freshly ground pepper
  • 1 cup shredded swiss or Gruyere cheese

Instructions:

  1. Preheat the broiler to a high heat.
  2. Melt the butter in a large ovenproof skillet over medium heat. 
  3. Add the onions and cook until softened, about 3 minutes. 
  4. Add the ham and thyme and continue to cook until the ham is lightly browned.
  5. Add the chicken broth and 3/4 cup water and bring to a simmer. 
  6. Add the gnocchi, stir well, cover and cook until the gnocchi is slightly tender, about 5 minutes. 
  7. Remove from the heat, uncover and stir in the peas, cream, 1/4 teaspoon salt and 1/4 teaspoon pepper. 
  8. Sprinkle the cheese over the top and broil until golden and bubbly, about 3 minutes. 
  9. Serve!

Fall Casseroles

Breakfast for Dinner Casserole

The best thing about this recipe is the prep time is only 10 minutes! This casserole will cook for one hour and when it’s done, will serve 12 people! This is a winner recipe for sure. 

Ingredients

  • 1 lb Sausage
  • 6 Eggs
  • 2 cups Cheddar cheese – shredded
  • 1/2 15oz package frozen hash browns 
  • 2 cups milk
  • Salt & pepper

Instructions:

  1. Preheat oven to 350 degrees.
  2. Crumble sausage into a skillet on the stove and brown completely. Remove from heat.
  3. In a large bowl, mix eggs and milk together and whisk well.
  4. Add salt and pepper to this mixture and stir.
  5. To a 9×13 dish, add frozen hash browns, sausage, and cheese – stir together in the dish
  6. Pour the egg/milk mixture into the dish.
  7. Bake at 350 degrees for 45 minutes – covered with foil. Remove the foil and bake for about 10-15 minutes more until the dish is bubbly and cheese is melted.

Chicken and Rice Casserole

We think this is one of our easiest and mess-free recipes! This recipe is a fan favorite, only requires one pan, and is simple enough for your picky eaters at home. This chicken and rice casserole yields four servings and requires only 15 minutes of prep time. 

Ingredients:

  • Extra-virgin olive oil, for baking dish
  • 2 cups white rice
  • 1 large onion – chopped
  • 2 cups low-sodium chicken broth
  • 2 10.5-oz cans cream of mushroom soup
  • 4 large bone-in, skin-on chicken thighs
  • 2 tbsp melted butter
  • 2 tsp fresh thyme
  • 1 clove garlic – finely minced 
  • 1 tbsp freshly chopped parsley
  • Salt & pepper

Instructions:

  1. Preheat the oven to 350° and grease a 9″-x-13″ baking dish with oil. 
  2. Add rice, onion, broth, and soup and stir until combined. Season with salt and pepper. 
  3. Place chicken thighs skin side up in rice mixture and brush with melted butter. 
  4. Sprinkle with thyme and garlic and season with salt and pepper. 
  5. Cover the dish with foil and bake for 1 hour. 
  6. Uncover and bake 30 minutes more, until rice is tender and chicken is cooked through. 
  7. Turn the oven to broil and broil until chicken is golden, 3 to 5 minutes.
  8. Garnish with parsley before serving.
